A Slice of Serendipity

In the last blog, Chris Hanley from Slicetruck Pizza dropped a bombshell. He explained that we couldn’t use his pizza shop for testing because they were the busiest when everyone else is closed. But then he said, “There’s another option you should know about. I have the lease on the space next door and it’s completely vacant.”

I couldn’t believe it. In LA, a retail space like that would typically cost somewhere between $5,000 and $10,000 a month. There's no way we could afford that. When he asked me to make an offer, I joked, “What about $250 a month?” To my complete surprise, he smiled and said, “If you can write me a check today for $750, you can have it for the next three months.”

I couldn't pay him fast enough—this was the break we needed. Now, with a space secured, I just had to figure out how to get an affordable freeze-dryer. We’d tried vacuum sealing and dehydration but they didn’t work. Freeze-drying seemed the most promising but those machines were expensive, massive and complicated.

That’s when we started brainstorming. We could figure out how to get it to work and we figured out where to put it. Now we needed to figure out how to buy1 that wouldn’t cost tens or hundreds of thousands of dollars. We needed another miracle—which is where we'll pick up next time.

As we continued our journey to figure out the freeze-drying dilemma, my experiments with the miracle berry pressed on. After the mind-blowing mango experiment, I decided to see what it could do for strawberries. Everyone thinks strawberries are already sweet but we all know sometimes they can be a bit of a letdown. I’m always hunting for the reddest, ripest ones to get that perfect sweetness. So I wondered: could the miracle berry take them to a whole new level?

I let the miracle berry pulp coat my tongue for 30 seconds and bit into the first one. It was like biting into the most decadent, sugar-coated strawberry you can imagine—without the sugar side effects. I couldn’t help but think: if I ever wanted to impress someone special, this would be my go-to.
