The berry contains miraculin, a protein that binds to the sweet receptors on the tongue so sour registers as sweet. While the effect lasts, bitterness is also curbed and savory food tastes richer. Curbed means lessened, not switched off. One piece lasts 15 to 20 minutes and two pieces last 20 to 40 minutes. Then it wears off on its own.
A serving is one piece, which is one berry half. Hold it on the tongue for about five seconds to rehydrate. Then chew it and spread the pulp across the whole tongue for a full thirty seconds before swallowing. That chewing decides how strong the effect is. First timers usually do best with two pieces.
