A zero-proof menu, and the capability behind it

Miracle berry changes how the palate reads flavor for 20 to 40 minutes. Sour reads sweet. Bitter is curbed rather than switched off. Savory gets richer. What that gives a bar is not a novelty. It is a way to build a drink at an acid level that would be undrinkable otherwise.

Why this matters behind a bar

A zero-proof drink usually fails in the same place. Without spirit you lose body, aromatic carry and length. So you reach for sugar to hold it together, and sugar is what makes most non-alcoholic drinks cloying by the third sip.

Miracle berry removes the reason to add sugar. You can push acid far past where it would normally be drinkable and let acid do the work sugar was doing.

Acid gives you length and lift. Sugar never did.

That is the capability. What you do with it is the interesting part, and we do not pretend to know. Everything below is a starting point rather than an answer.

The serve

One piece, which is one berry half. Hold it on the tongue about five seconds to rehydrate, then chew and spread the pulp across the whole tongue for a full thirty seconds. That thirty seconds is what determines how strong the effect is. First timers usually do best with two pieces.

The effect is per guest, not per drink. One piece covers everything they drink for 20 to 40 minutes, so it suits a flight or a first round rather than a single serve.

The showpiece

Naked Sour

1.5 oz fresh lemon juice 0.75 oz egg white or aquafaba 2 dashes bitters Dry shake, shake, strain. Coupe.

That is the whole recipe. No sweetener and no spirit. Neat lemon juice, which is undrinkable, becomes a balanced sour. Serve it second, after the berry, and the argument is finished.

Converted from a cocktail menu

These began as spirit drinks, written for us in 2018 by an award winning bartender. We pulled the alcohol and changed nothing else. The berry works on the acid and the fruit rather than on the spirit, so the drink survives losing the spirit.

Summer, Sober

0.5 oz lime juice 1/2 ripe avocado 1.5 oz coconut water Crushed ice. Bucket glass.

Avocado carries the body the rum used to. This one converts better than it drank.

Jolly Rancher, Grown

0.75 oz lime juice 0.5 oz unsweetened cranberry 3 raspberries 1/2 cup watermelon chunks Cayenne. Shake, strain. Collins.

The original used a bar spoon of aloe liqueur. Lime went up to carry the sweetening, because with the berry more acid reads as more sweet. That is this whole menu inside one drink.

Piura

0.5 oz lime juice 1.5 oz pineapple juice 1.5 oz almond milk 1 bar spoon vanilla extract Shake, strain. Coupe. Grated clove.

Clove and vanilla carry the aromatics the tequila carried.

Green Greatness

1/2 kiwi, muddled 1 oz melon or cucumber juice 0.5 oz lime juice Shake, strain. Cubed ice. DOF.

Barely changed. The tequila was the only thing removed.

Blue Banana

0.5 oz lemon juice 1/2 ripe banana 10 blueberries Shake, strain. DOF, crushed. Mint.

Banana does what the bourbon did for weight.

Sunshine Sipper

Lemon over ice water. Or stirred into unsweetened tea for an Arnold Palmer.

Two ingredients. The simplest demonstration here and the easiest to batch.

Build from the well

Everything above can be made from what is already behind your bar. That is deliberate. A menu that needs an ingredient you have to source is a menu that gets tried once.

Unsweetened cranberry

The best demonstration in the building. Neat it is close to undrinkable, which is why nobody pours it unsweetened. After the berry it reads like a sweetened cranberry cocktail with nothing added.

Grapefruit

The most useful, because the berry does both jobs at once. Sour reads sweet and the bitter pith is curbed. It stops needing the sugar that usually props it up.

Pineapple

Carries body, which is the thing zero-proof drinks are usually short of.

Things worth knowing before you build

  • Bitter is curbed, not blocked. Very bitter things still read bitter underneath. Do not build assuming Campari disappears. It does not.
  • Most bitters are alcoholic. If the program is strictly zero-proof, source accordingly.
  • It does nothing to a drink that is already sweet. The berry needs acid or bitterness to work against.
  • The effect is per guest. Build a flight rather than a single serve.
  • Shelf life is ten years. A case sits on the back bar until the night you want it.
